Ingredients:
- 1 can (375g) chickpeas, rinsed and drained
- 1 punnet of cherry tomatoes, diced
- 1/2 a large cucumber, diced
- 1/2 a red onion, diced
- 1 avocado, diced
- Coriander, finely chopped
(Dressing)
- Juice of half a lemon
- A drizzle of olive oil
- Salt & pepper
