Steps —
1. Make coffee: Brew coffee and let it cool. Add sugar if you like it sweet.
2. Whip cream: In a bowl, whip heavy cream with 2–3 tbsp sugar (and vanilla) until stiff peaks form.
3. Mix with mascarpone: Gently fold the mascarpone into the whipped cream until smooth.
4. Dip ladyfingers: Quickly dip each ladyfinger in coffee (don’t soak, just a quick dip).
5. Layer: In a dish, layer dipped ladyfingers, then spread a layer of the cream mixture. Repeat until finished, ending with cream on top.
6. Chill: Refrigerate for at least 2–3 hours (overnight is best).
7. Serve: Dust cocoa powder on top just before serving.
