Notes
Stir-fried beef with scallions is a classic Chinese home-style dish. Marinated beef slices are quickly stir-fried with scallions until fragrant. The beef is tender and juicy, with a rich scallion aroma, and the sauce is savory and slightly sweet – perfect with rice! Use beef tenderloin or sirloin, sliced thinly and evenly. Marinate with soy sauce, cooking wine, and cornstarch to lock in moisture and enhance tenderness. Stir-fry over high heat until the beef is cooked through but not tough, while the scallions retain their crispness. It's delicious with rice or noodles and is a popular choice for both family meals and restaurants!
